3 Shifts, 1 Week
So this week I’m working all three shifts. I was off yesterday (Monday), today I’m working from 8:30 – 5:00, Tomorrow and Thursday I’ll be working from 3:00 – 11:30 and on Friday I’m on 3rd from 11:00 – 7:00……Talk about a crazy week. Our department is still working on getting a few new hires trained and until then shifts have been a bit crazy. Hopefully though by the end of April I’ll be doing mostly Days with the occasional 2nd shift on weekends….Can’t wait to find some normalcy….lol.
I’m making salmon patties, French fries and cole slaw for dinner. I’ll share the recipe for the Cole Slaw after the break
Sweet & Creamy Cole Slaw
This slaw mimics KFC Cole Slaw
Ingredients
- 1 Bag Dole Classic Coleslaw Cabbage Carrot Mix in the bag
- 1/2 cup Mayonnaise I use Hellmann's
- 1/2 cup sugar sweeten to taste (Can substitute sweetener of choice for low carb option)
- 1/2 cup heavy cream
- 2.5 tbsp Lemon Juice
- 1.5 tsp White Vinegar
- 0.5 tsp salt
- 1/8 tsp ground black pepper
Instructions

Combine Mayonnaise, Sugar, heavy cream, lemon juice, vinegar, salt and pepper in a large bowl until smooth

Add Coleslaw from package and mix well

Cover and refrigerate for at least 2 hours before serving.
Recipe Notes
If you prefer more finely chopped vegetables, pulse them in a food processor a few times before mixing with them in with the dressing.
